Reactions
New minerals grow at the expense of old minerals. Chemical reactions digest the old minerals.

In this rock (called schist), the new minerals garnet, staurolite, and muscovite have grown. These minerals were not in the protolith (original rock), but become stable at elevated temperatures and pressures.
